Yagli Kofte – Fist Sized Bulgur Balls


  • 6 tea glasses of fine bulgur
  • 1 spoon of tomato paste
  • 1 spoon of pepper paste
  • 1 onion
  • 4-5 cloves of garlic
  • Black pepper
  • Salt
  • Olive oil or clarified butter
  • 2 tomatoes (in summer)


Peel onions and garlic and minced them. Mix onion, garlic, black pepper, tomato and pepper paste in an edged tray. Add fine bulgur and knead it. Add water occasionally to ease kneading. After it’s soft enough, add oil and continue kneading. Take egg-sized pieces and put them in a plate. Serve it with salad, pickles and ayran.
