Beyran – Soup With Meat


  • 1 kilogram of meat with bones (from lamb’s shin or neck)
  • 1-2 medium onions
  • 1 big garlic
  • Flaked red pepper
  • Black pepper and salt
  • 2 glasses of rice
  • 1-2 lemons


Wash meat with bones. Put it in a pot and pour enough water on the meat. Strain it when it begins boiling. Add enough warm water on it. While it is boiling, take bubbles with a spoon. Cook it at a low heat until bones can be easily discarded. In another pot, cook rice with 3 glasses of water and enough salt. Squeeze lemon and crush garlic, then mix them in a bowl. Take cooked meat and bone them. Put meat into thje pot again. Put 2-3 spoons of rice and add meat and stock in a plate. Add lemon juice and garlic mix and enough salt and flaked red pepper. Beyran is a popular food in Gaziantep that is eaten early in the mornings in every season.
